Sprouted Mung Bean Salad

 

Make this simple, tangy and nutritious sprouted mung bean salad enriched with vitamin C and fibre.

Essentially good for the weight-watchers !!!!

Ingredients:

1 cup sprouted mung

1 cup cucumber finely chopped

1 small onion finely chopped

1 small green chilly finely chopped

2 tbsp chopped coriander

2 tbsp chopped parsely

1 tbsp chopped mint (optional)

1/4 tsp pepper powder

2 tbsp lemon juice

salt to taste

Method:

Mix together the sprouted mung, chopped onions, green chilly, pepper powder and salt in a salad bowl .

Add in the cucumber and coriander/parsely/mint leaves alongwith the lemon juice and mix well again.

Refrigerate for an hour and serve.

Note: Make sure you lightly toss the salad before serving.
